"A special, select hand harvest of only the most pristine clusters from our oldest Chenin Blanc vineyard, planted in 1982, was performed to obtain the grapes used to make this wine. The fruit was pressed whole cluster. The juice was transferred to stainless steel barrels in which alcoholic fermentation spontaneously occurred. Other than a minimal amount of sulfites, nothing was added to the wine. It remained in steel barrels for seven months prior to bottling." - Paumanok Vineyards

Fresh and light, this dry Chenin is easy to drink at only 11% alcohol. It offers a great deal of character for its weight, with a subtle yeast note resulting from seven months sur lie.
