It is then expertly sharpened and finished by Shotarou Nomura, whose dedication to traditional hand sharpening has earned him respect among professional chefs and knife enthusiasts alike.
Made from Yasuki White #2 carbon steel, the blade takes an exceptionally keen edge and is easy to sharpen, making it a favourite among chefs who value pure cutting performance.
